Thrice grated salad

Luckily all three children enjoy salad leaves, although The Naughty Knight did admit to me earlier this week that his "tummy is not addicted to salad leaves".  For those whose little tummies really do not like greed leafy salads, this is delicious and healthy alternative.  Other root vegetables would work just as well, although might not be so popular with the little bellies. And omit the caraway seeds for those more particular salad eaters, replacing them with a handful of sultanas or raisins. 
Ingredients
  • 1 carrot
  • 1/3 raw beetroot
  • 1/2 apple
  • squeeze of lemon juice
  • 1 tsp caraway seeds
Method
  1. Peel and grate the carrot and beetroot. Grate the apple, leaving the skin on.
  2. Mix together in a bowl, adding a squeeze of lemon juice and the caraway seeds.
