Stir fried cabbage

You can use pretty much any type of cabbage for this recipe.  Good for when the cabbage is slightly floppy and you have enjoyed enough of the steamed variety. Good for any bellies who have been turned off cabbage having eaten it at school or other institution.  I can almost guarantee they will suddenly develop a love of these green leafy vegetables.  If you vary the type of sweet fruit and the type of vinegar you use, you can avoid getting bored of the vegetable box cabbage a little longer.  
  • half red or white onion, very finely chopped
  • 1 clove garlic, crushed, if you have the time
  • dash olive oil
  • cabbage, shredded - enough for the people you are cooking for
  • sweet fruit - (e.g. half apple, grated, dried cranberries, dried blueberries)
  • 2 tsp sugar - brown or white
  • 3-4 tbsp balsamic, white wine or cider vinegar, depending on taste
  1. Gently fry the onion in a little olive oil.
  2. When turning golden add the garlic if using.  Then add the cabbage and stir fry for about 3 minutes, stirring regularly.  
  3. When the cabbage is nearly cooked but still got quite a bite, add the sweet fruit, sugar and balsamic vinegar and stir well.  
  4. Cook for a further 3 minutes or so until cooked al dente.
