Red onion and tomato salsa

A quick and easy side dish to accompany all manner of meals.  Prepare in advance and leave for several hours, if time, to get the most of the flavours.  
  • 1 large red onion, peeled and finely chopped
  • 4 medium tomatoes, quartered, deseeded and chopped roughly (keep the seeds and use them to put in a soup or casserole or stew)
  • 2 cloves garlic, peeled and crushed
  • 1 tsp ground cumin
  • juice of half lime
  • handful of fresh coriander leaves, finely chopped
  • pinch of dried chill flakes, if you fancy a bit more of a kick
  1. Mix the onions and tomatoes together.
  2. Add the garlic and cumin and stir well. 
  3. Add the lime and coriander leaves and chill flakes if using.  Mix well.
  4. Leave for a few hours for the flavours to develop.
