Not Waldorf Salad

I made this when we had an excess of celery and pears after our over shopping for the Christmas period and was wondering what to do with them. This is a good example of using classic recipes as inspiration but making the recipe fit to what we already have in the larder rather than the other way round.  We didn't have any walnuts so I used cashews instead and chicory instead of lettuce leaves.  The result was very tasty even if Not Waldorf Salad.  
Ingredients
  • 1 tbsp mayonaise (or 1/2 tbsp mayo and 1/2 tbsp natural yoghurt mix for a lighter option)
  • juice of quarter lemon
  • 1 large pear, peeled, cored and cubed
  • 2 stalks celery, chopped in half lengthways and then sliced thin
  • handful of cashew nuts
  • handful of chicory leaves, washed
  • good sprinkling pepper
Method
  1. Mix the mayonnaise with the lemon juice in a bowl. 
  2. Prepare the pear and the celery then add with the nuts to the mayonnaise mixture.  
  3. Arrange the chicory leaves in a salad bowl.
  4. Spoon the pear, celery and nuts on top.
  5. Season to taste
