Coleslaw

Or as we call it, "coldslaw".  Beautiful, full of flavour, and the bite will make up for any lack of meat on your menu. You can use a whole range of raw vegetables too, depending on what is in your kitchen: beetroot, celeriac, turnip, apple, celery.  Vary quantities to taste.  
Ingredients
  • half red onion
  • quarter red cabbage
  • quarter white cabbage
  • carrot
  • parsnip
  • 2 tbsp mayonaise
  • 2 tbsp natural yoghurt
  • 1 tsp mustard
  • juice of half lemon
  • seasoning
  • small handful of fresh parsley and coriander leaves, roughly chopped
Method
  1. Finely slice the onion. Shred the cabbage and grate the carrot and parsnip.  Mix together in a large bowl.
  2. Mix the remaining ingredients together in a jar or small bowl until well combined. 
  3. Add to the raw vegetables - enough to coat, but not drown, and mix well.
