Chicory, pear and almond salad

Very quick to make and yummy. Add a cheese (feta or goats cheese) to make it more substantial if you have some. Quantities are very approximate and depend on appetites, availability and size of chicory and pear. Use your judgement.
  • half - whole white chicory, thickly sliced
  • half - whole red chicory, thickly sliced
  • half - whole pear, juicy, but not too ripe and mushy, diced
  • several tablespoons toasted almonds, bashed into fairly large pieces
  • 1 tbsp your favourite dressing
  1. Mix the salad ingredients together.
  2. Drizzle your favourite salad dressing all over.
  3. Toss. 
  4. Eat.
