Cauliflower and kale cheesy cheesy

When The Naughty Knight is regressing (which he has done a lot since the arrival of Princess Baby), he says "cheesy" instead of cheese. We of course have copied this cute behaviour and name everything with cheese in it "cheesy cheesy".  Here is our family version of cauliflower cheese. I add the kale to make it more colourful, as cauliflower cheese is very white; broccoli or other green vegetables would work just as well.  Could be a side dish for a more substantial meal, or the kids enjoy it as an evening meal in itself.  
  • half cauliflower, cut into large florets
  • 2 sprigs of curly kale per person
  • 1 large knob butter
  • 1-2 tbsp plain flour
  • 1/2- 1 pint milk
  • several large handfuls of grated cheddar cheese
  • a little grated nutmeg
  • 1 tsp mustard 
  • pepper
  • 1 tbsp breadcrumbs (click here to see  how to make them)
  1. Bring a large pot of water to the boil and add the cauliflower florets. Simmer till just cooked, it is not nice soggy.  
  2. Meanwhile, melt the butter in a pan and then add the plain flour. Mix to a paste.
  3. Very slowly add the milk little by little, stirring all the time until you have a white sauce.
  4. Add lots of the cheese, keeping a tablespoon or so aside for later, and stir well. 
  5. Just before the cauliflower is ready to drain, add the kale to the water and cook till just cooked.  
  6. Add the grated nutmeg and mustard if using and pepper.  Stir well.  
  7. Drain the cauliflower and kale well, making sure there is very little water left or the dish will turn watery.
  8. Transfer to a grill proof dish and cover with the cheese sauce.  
  9. Sprinkle the breadcrumbs and remaining cheese on top and grill till the cheese is bubbling.
