Girly winter salad

I call it girly, because the cabbage is purple and the celeriac goes a lovely shade of lilac. We had this with a mushroom omelette and homemade potato wedges for adult comfort supper.   
  • red cabbage
  • celeriac (cleaned and peeled)
  • 1 apple
  • a bit of onion - red is prettier
  • mayo
  • squeeze of lemon
  1. Finely shred the cabbage
  2. Grate the celeriac and the apple (no need to peel)
  3. Finely slice a bit of onion to taste
  4. Mix the above together with a bit of mayo (to taste) and a squeeze of lemon.
