Chicken a la Stanley

This is an unusual recipe which my mother gave me for a chicken dish, as different as you can imagine from her bog standard but unbeatable roast chicken. Incidentally, this recipe, written on the back of a torn envelope, is typically vague on particulars, leaving you, the cook, to decide how best to interpret it.  Gigi, an aging belly. 
  • 4 tsp butter
  • onions
  • 1 chicken, cut in pieces
  • stock
  • mix of 3 tbsp butter and flour
  • cream 
  • seasoning
  • banana
  • more butter
  1. Melt the butter, add the onions and the chicken. 
  2. Cover, cook slowly for 10 minutes.
  3. Add stock and cook, covered, until meat is tender.
  4. Remove the chicken, rub the stock and onion through a seive. 
  5. Thicken with the butter and flour mixed together.
  6. Add cream. Season with salt and pepper.
  7. Pour the sauce around the chicken pieces, garnish with bananas cut in diagonal slices and sauteed in butter.
