Gigi's roasted chicken pieces

This dish is so easy to make I can cook it when half asleep after a really bad night. It can be assembled in advance and then roasted when needed.  Looks good and tastes better.  Thank you Gigi for sharing this recipe with me.  It's a life saver.  
  • chicken thighs and drumsticks - enough for everyone's appetites
  • 1-2 onions, depending on taste, chopped into quarters
  • a couple of large tomatoes, quartered (red pepper and/or fennel works well, too)
  • 4-5 garlic cloves, unpeeled
  • a good sprinkling dried thyme or large sprig fresh thyme
  • seasoning
  • 2 tbsp cream/ creme fraiche/ sour cream
  1. In a large, shallow oven proof dish place the chopped onion, tomatoes and garlic cloves. Place the chicken pieces on top.  Sprinkle the thyme and seasoning on top.
  2. Cover and leave in fridge if cooking later. 
  3. About an hour before serving, place in the middle of a medium hot oven.  After about 30 minutes turn the chicken pieces. Baste with the juices from the chicken, onions and vegetables. 
  4. After another 15 minutes check they are nearly cooked, remove the cover and roast for a further 10-15 minutes until nicely browned and cooked through.  
  5. Remove from oven and stir in the cream.  
  6. Serve and enjoy.
