Citrus roasted chicken pieces

Easy peasy citrus squeasy chicken to impress. Nothing more to be said. 
  • 8 chicken pieces (thighs and drumsticks work best)
  • juice of half -whole lemon, cut up the remaining lemon into quarters and retain
  • juice of half-whole orange, cut up the remaining orange into quarters and retain
  • 3-4 garlic cloves, in their skin
  • seasoning
  • couple of large sprigs of fresh thyme/ 2 tsp dried thyme
  • 1 small glass of white wine if you have some
  • squeeze runny honey
  1. Place the chicken pieces in a roasting tin. Add the lemon and orange juice.  Throw in the remaining lemon and orange pieces and garlic cloves and season.   Mix well and scatter the thyme over.  
  2. Roast on high for about 45-50 minutes or until the chicken is cooked through.  
  3. Take out of the oven and place the tin on a hot flame to make the gravy.  If you are feeling really lazy, don't even bother taking the chicken out as you do this! Add the wine and allow to evaporate a little. Add a large squeeze of honey and stir, squashing the garlic cloves with the spoon to make the delicious caramalised garlic ooze out and make a beautiful gravy.  
  4. Serve - this goes well with crunchy brown rice and vegetables.
