Spicy squid

We all love squid, and this is a lovely starter, a real treat for when we're stuck at home on a Saturday night - serves 2 adults.
  • 1 large squid
  • dash of olive oil
  • 1 clove garlic, sliced then chopped small
  • end of piece of ginger, peeled and finely grated
  • pinch dry chilli flakes
  • dash of mirin
  • juice of half a lime
  • dash of brown rice vinegar
  • knob butter
  • coriander leaves, chopped, if available

  1. Prepare the squid, removing all the insides, and slice into thirds. Then cut each into half again.  Score lightly across each one into hashes.
  2. In a pestle and mortar mix together the garlic, ginger, chilli flakes, mirin, vinegar and juice of half lime.
  3. Baste a griddle with olive oil and heat until very hot. Place the squid with the scored side down in the griddle. Fry for a couple of minutes, then turn with tongs. Fry for another couple of minutes until the squid is cooked.  
  4. When just cooked, add a knob of butter and let it melt and glaze over the squid.  Pour the chilli dressing over.
  5. Serve with coriander leaves.
