Salmon Teriyaki

This is one of the easiest recipes I know, and is loved so much by the children. So much so, in fact that Maths Geek has been known to choose this above sausage casserole for his birthday lunch...Try to use as "ethical" salmon as possible.  Delicious served with brown rice.  
  • salmon fillet or steak - one each, children can share one
  • large squeeze of runny honey
  • very large slosh of soy sauce
  • 2 or 3 cloves garlic
  • mirin if you have any in cupboard
  • splash of olive oil
  • seasoning
  1. In an oven proof dish mix up the hone, soy sauce, mirin and olive oil.
  2. Smash the garlic cloves and chop roughly. Add to the mixture.
  3. Season if desired
  4. Place fish in the dish and coat well with the sauce.  If you have time to marinate, excellent.
  5. Roast in hot oven for about 20 minutes or until cooked through, but not dry. Baste from time to time.
