Prawn and green stir fry

We have this occasionally, when we can find MSC prawns (if I do find them, I but double and squirrel some away in the freezer). The 'green' can be green beans or broccoli, depending on what is in season.  This goes really nicely with egg fried rice (Special Fried Rice without the meat or vegetables) for a delicious weekend treat, although the person on washing up duty will be rather busy after the meal. 
Ingredients
  • 1 small onion, finely chopped
  • splash vegetable oil
  • 1 head broccoli, chopped into small "branches'"  and keep the trunk or 2 large handfuls of green beans, ends removed and halved if necessary 
  • 1 small red chilli, seeds removed, sliced thin, optional, depending on how fiery you fancy this
  • 1 small end of ginger, peeled and sliced fine
  • 2 cloves garlic, sliced fine
  • good glug dark soy sauce
  • splash hot water
  • 1 packet of MSC prawns - raw King Prawns are the most delicious, but frankly anything MSC will do...
  • lots of black pepper
  • fresh coriander, chopped
Method
  1. In a wok fry the onion in the oil under sweet and golden.
  2. Add the broccoli or beans and stir fry.
  3. Add the chilli if using, ginger and garlic and stir.
  4. Add the soy sauce and simmer away, adding a splash of hot water if it is drying out.
  5. When the green stuff is tender but still with a bite, add the prawns.  Cook on high until cooked, adding lashings of freshly ground black pepper as you do. 
  6. Serve with a large sprinkling of coriander.
