Potato and tuna melt

A variation on bubble and squeak.  This is a good and quick weekend lunch meal which you can assemble easily when you think you have nothing ready. Great for using up left overs.  Adapt according to what you have hanging around. 
Ingredients
  • left over boiled potatoes - about 4
  • half onion, sliced
  • olive oil
  • half tin left over tuna
  • 1 tsp worcestershire sauce
  • several large handfuls of grated cheddar or red leicester cheese
Method
  1. Fry the onion in a knob of butter and splash of oil in a non-stick pancake/ omelette pan. 
  2. Slice the potatoes thick and add to the pan. Fry until golden.  
  3. Press the potato and onions down a little to form a "cake".  Sprinkle the tuna on top, add the worcestershire sauce, season and cover with the cheese.
  4. Place under the grill until the cheese bubbles.
