Passion fruit and citrus ice cream

Delicious, impressive and could possibly count towards your five-a-day?  Whatever, it is very easy to make, just requiring a little time and patience.  
  • 2 passion fruit
  • 1 lime, juiced
  • half lemon, juiced
  • half orange, juiced
  • 80g icing sugar
  • 300 ml double or whipping cream
  1. In a large bowl, add the passion fruit pulp, lime, lemon and orange juice and stir well.  
  2. Add the icing sugar and stir well so it dissolves.
  3. Pour in the cream and start to whip. This may take a while if doing by hand, but is worthwhile in the end. Whip till it forms soft peaks. 
  4. Transfer to a freezer proof container and freeze.
  5. Lick out bowl. Check freezer. Dream. 
  6. Wait 6 hours. Check freezer again. Eat.  Enjoy.
