Cheesy shortcrust pastry

The extra butter in this makes it tastier, and easier to roll out, I think but of course less healthy. Life is full of touch decisions.  
  • 200g plain flour
  • 120g butter/ margarine, room temperature
  • pinch cayenne pepper
  • pinch dry mustard powder
  • 40g cheddar cheese, grated
  1. Rub the flour and the butter together until they look and feel like breadcrumbs.
  2. With a knife, stir in the cayenne pepper, mustard powder and cheese.  
  3. Slowly add about 2 tbsp water, stirring it in with a knife or fork, until it comes together as a dough. You may need a little more water.  
  4. Bring together into a ball using your hands. I generally have to add more water or more flour until I get it right.
